Rosti potato with cilantro and ginger sautéed prawn

Try this gourmet and easy rosti potato recipe with fragrant cilantro and ginger prawns.

1. Rinse the cilantro. Keep some leaves for garnishing and finely chop the rest. Peel, wash and grate the potatoes into a bowl. Add the eggs, the cilantro and the paprika. Season with salt and pepper.

2. Pour 1 tablespoon of oil into a mini-pan. Pour 1/4 of the potato mixture into the pan. Fry for 5 minutes. Turn the potato patty over and cook for 3 minutes. Do the same for the three other potato patties. Keep warm and set aside.

3. Peel and chop the garlic. Heat 2 tablespoons of oil in a big pan. Stir-fry the prawns for 2 minutes on each side. Sprinkle with ginger, garlic and Espelette pepper. Cook for another minute. Pour the cognac to flambé the prawns. Let the alcohol evaporate and top with sea salt.

4. Divide the potato patties on plates and top with the prawns. Garnish with the sweet chili peppers and a few cilantro leaves.
